The best part about summer is POPSICLES!! I love making popsicles at home that as tasty as they are healthy. So I’d like to share a few of my favorite popsicle recipes to get you through this summer heat!
- Blueberry Coconut Milk Popsicles: Blend coconut milk, blueberries, and honey in a blender. Pour this mixture into a popsicle mold. Freeze + enjoy!
- Strawberry Coconut Milk Popsicles: Blend coconut milk, strawberries, and honey in a blender. Pour this mixture into a popsicle mold. Freeze + enjoy!
- Summer Berry Coconut Milk Pops: Blend coconut milk, blackberries, raspberries, strawberries, honey, and cardamom in a blender. Pour this mixture into a popsicle mold. Freeze + enjoy!
- Pineapple Raspberry Pops: Chop pineapple into chunks. Place a few raspberries & pineapple chunks into each popsicle mold. Combine coconut water with some freshly squeezed lime juice. Mix and pour into each mold. Freeze + enjoy!
- Blackberry Limeade Pops: Stir ¼ cup of a sugar substitute (Stevia, Splenda, etc. and 1 cup of hot water until the sugar is dissolved. Add ¼ cup of fresh lime juice and 1 cup blackberry puree. Stir together and pour into popsicle molds. Freeze + enjoy!
- Strawberry Lemonade Pops: Place a few sliced strawberries into each popsicle mold. Pour your favorite homemade lemonade into each mold. Freeze + enjoy!
- Watermelon Fro-Yo Pops: Blend seedless watermelon into a puree. Strain the puree with a fine sieve into a bowel. Place the strained mixture back into the blender with Greek yogurt and honey. Blend and pour mixture into popsicle molds. Freeze + enjoy!
- Fruit Rainbow Pops: Slice kiwis, peaches and strawberries. Place kiwis, peaches, strawberries, raspberries, and blueberries into each popsicle mold. Pour your choice of coconut water, lemonade, or apple juice into each mold. Freeze + enjoy!
